Orange-Almond Waffles (Vegan)

I’ve been craving carbs and nourishing comfort food. I know I’m not the only one. Is this our bodies acknowledging and freaking out that something has changed and we need to fuel up? Perhaps. Feeling very fortunate over here to a have fully stocked pantry and healthy kids who are willing to try new breakfast ideas (particularly if in the form of pancake, waffle or baked good). I snuck in a run this morning in the (relative to CA) cold and came home HUNGRY. This waffle - packed with protein, fiber and vitamin C - is what came out of it.

These waffles are soft and almost doughy on the inside and crunchy on the outside. Reminds me of the soft but textured feel of an almond-olive oil cake. Easily vegan but also delicious with yogurt (or vegan yogurt) on top. Stay healthy, friends!


Orange-Almond Waffles

1 Cup Whole Wheat Flour
1 Cup Almond Flour 
1 Scoop Vanilla Protein Powder (I used Orgain Vanilla Bean)
1/2 tsp Kosher Salt
2 Tbl Olive Oil or Coconut Oil
1/2 Cup Orange Juice
1 Cup Almond Milk
2 Tbl Maple Syrup 
1 tsp Vanilla
*Fresh Orange, Orange Zest, Almonds + Maple Syrup for topping*
