Sweet + Spicy Watermelon Salad

One thing to keep spirits up in these trying times - Spring is here (at least in California) and it can’t be stopped. In fact, it feels even more beautiful and illustrious than ever. We've been getting Imperfect boxes the last couple of weeks and I’m so grateful to have this influx of fresh fruit and vegetables. This week’s box had a baby watermelon. Yeehooo and helllllo Spring. Watermelon was often my dinner of choice on the hottest nights in NYC where you don’t really want to eat anything at all. Even Blue got into it with me.

This salad is fresh, crisp, light, and super flavorful. Lot’s going on in one bowl which involves very little prep or fuss. If you’re worried about to much spice you can cut back or omit the jalapeno, but it really does add such a nice pop. You can always pick around it for your kids - or if they’re like Rex let them try it and see them enjoy spicy!

Sweet + Spiced Watermelon Salad

1 Small Watermelon, sliced in small cubes

1 Large Orange, supremed, plus juice

1 Shallot, small dice

½ jalapeno, small dice (no seeds)

2 Tbl Red Wine Vinegar

1 Scallion, thinly sliced

1 Cup Sheep's Milk Feta, sliced in small cubes

2 Tbl Sprouted Seeds 

Olive Oil

Maldon Sea Salt + Black Pepper

1. Combine watermelon, orange + orange juice in wide serving bowl and refrigerate to get nice and cold (this can be as short as a half hour or a few hours before eating).

2. Combine shallot, jalapeno + red wine vinegar in small bowl and let sit to quick pickle while the fruit chills. 

3. Combine all ingredients in the serving bowl.

4. Salt, pepper and good olive oil  to taste.
